Bread - Rolls, Cinnamon Rolls (Mom) 1 package yeast (made up according to directions - water, sugar) 3/8 cup butter 1/2 cup boiling water 1/4 cup sugar 3/4 tsp salt 1 egg (well beaten) 1/2 cup cold water 4 cups sifted all purpose flour Make up yeast according to directions. Put boiling water into mixing bowl, and add butter. Add sugar, salt, egg and cold water. Add yeast and mix thoroughly. Add flour and mix thoroughly, but do NOT knead. Store overnight in refrigerator in covered greased bowl. (I use a puch bowl, because it rises). Rolls: Put 3 small balls (1/2 inch) of dough into each greased muffin tin for rolls. Let rise 2 to 3 hours before baking. Bake at 375 F for 10 to 15 minutes - until golden brown. Bread: Fill about 1/3 to 1/2 of pan with dough. Let rise for about 2 to 3 hours before baking. Bake at 400 F for about 25 minutes. Cinnamon Rolls: Make up mixture of 1/4 cup butter, 1/2 cup brown sugar, 1 tsp cinnamon. Pat out dough into strips approx 1 inch by 6 inches by 1/3 inch. Smear on cinnamon mixture and roll. Put rolls into greased baking pan with a bit of mixture on bottom. Let rise for 2 to 3 hours. Bake at 400 F for 25 minutes.
