Carrot Pudding (Mom's Christmas pudding) 1 cup butter 2 cups brown sugar 4 eggs 4 cups grated carrots 1 cup raisons 2 cups flour 2 tsp baking powder 1 tsp salt 1 tsp nutmeg 1 tsp cinnamon 1/2 tsp cloves 1/2 tsp ginger Mix ingredients together. Dump into a buttered steaming dish/bowl. Steam for 4 hours (it expands by about 30%). Make up Pudding Sauce..... 1 cup brown sugar 1 tblsp corn starch 1.25 cups water pich of salt 1 tsp butter 3/4 tsp vinegar 1 tsp vanilla Mix sugar, corn starch and water. Cook on medium heat until it boils and thickens, AND gets clear. If it doesn't clear, then add a little extra HOT water. Add salt, butter, vinegar and vanilla. Spoon steamed pudding into serving dishes, and pour some sauce on top. Enjoy, and remember many Christmas' past.
