Potluck Beef (Helen) 1 lb beef - sirloin tip (can modify to be chick, or pork) 4 medium potatoes 1 samll onion chopped 1 lb carrots 1/2 cup water 1/2 cup red wine (white for chicken) 1 tblsp olive oil 1 tblsp butter 1/2 tsp salt 1/4 tsp fresh ground pepper Peel potatoes. Dice into approx 1/2 in cubes. Peel and dice carrots Dice onions into small pieces. Put olive oil into cooking pot. Put meat onto bottom of pot. Salt and pepper meat. Add potatoes, carrots, onion, water, wine. Cover pot and bake at 325 F for 1.5 hours. Easy, good, and many variations are possible.
